Homemade Cornbread

We don't have the option of buying anything in boxes or packages since B has Celiac Disease (and other dietary issues) so we make everything from scratch. 

Cornbread is a staple for Mr. Bill and below includes our gluten free ingredients. Also remember... cornbread is always best in an iron skillet, but also can be baked in a glass or metal 8 or 9 inch pan.

  • 1 cup milk
  • 1/4 cup butter, melted (4 Tbsp)
  • 1 egg
  • 1-1/4 cup yellow, white or blue cornmeal (we use Gluten Free Corn Flour since GF Corn Meal sometimes bothers Bill)
  • 1 cup flour (we use Bob's Red Mill GF All-Purpose flour with NO gums or emulsifiers!)
  • 1/2 cup sugar
  • 1+ Tbsp baking powder (healthier to use one with NO aluminum)
  • 1/4 tsp salt

Heat oven to 400F (or 375F if using glass pan). Grease bottom of iron skillet / pan.

In large bowl, beat milk, butter and egg with large fork or whisk. Stir in remaining ingredients until just moistened (batter will be lumpy.) Pour into pan and bake 20 to 25 mins or until toothpick comes out clean.
