Smothered Pork Chops
Ingredients:
1. 4 Pork Chops (bone-in or boneless)
2. Salt and Pepper, to taste
3. 1 teaspoon Garlic Powder
4. 1 teaspoon Paprika
5. 2 tablespoons Olive Oil
6. 1 Onion, thinly sliced
7. 8 oz Mushrooms, sliced
8. 2 cloves Garlic, minced
9. 1 cup Chicken Broth
10. 1/2 cup Heavy Cream
11. 1 tablespoon Dijon Mustard
12. Fresh Thyme or Parsley, for garnish
Directions:
1. Season pork chops with salt, pepper, garlic powder, and paprika on both sides.
2. In a large skillet, heat olive oil over medium-high heat. Add pork chops and sear until golden brown on both sides, about 4-5 minutes per side. Remove from skillet and set aside.
3. In the same skillet, add sliced onions and mushrooms. Cook until softened and mushrooms release their juices, about 5-7 minutes.
4. Add minced garlic and cook for another 1 minute until fragrant.
5. Pour in chicken broth, scraping up any browned bits from the bottom of the skillet.
6. Stir in heavy cream and Dijon mustard. Bring to a simmer.
7. Return pork chops to the skillet and spoon some of the sauce over them.
8. Cover and cook over medium-low heat for 10-15 minutes, or until pork chops are cooked through (internal temperature of 145°F/63°C).
9. Garnish with fresh thyme or parsley before serving.
Serve smothered pork chops with the creamy mushroom sauce spooned over the top.
