Old-Fashioned Potato Soup

  • This is a great thrifty, quick, easy to make recipe! You can add cooked broccoli, cheese, bacon, ham, sour cream, chives, etc. into soup too for a great meal.

    • 4 medium potatoes (about 2 pounds), peeled and cut into 1/2-inch slices
    • 2 tablespoons butter
    • 1 small sweet onion, peeled and chopped
    • 3 cups milk 
    • pinch celery salt
    • 1/4 teaspoon salt (optional)
    • pinch cayenne (optional)
    • 2 tablespoons minced parsley (optional)

    1. Place potatoes in a 2-quart saucepan with enough water to cover. Set lid askew on pan, and boil for 10 minutes, or until tender.

    2. Meanwhile, melt butter in a skillet over moderate heat. Add onion, and cook, uncovered, for 5 minutes, or until soft. Set aside.

    3. When potatoes are done, drain them in a colander, then mash them with potato masher while still warm.

    4. Return potatoes to saucepan, and add onion and any butter remaining in skillet. Stir in milk, celery salt, and cayenne pepper (if using). Cook over moderate heat, stirring frequently, until smooth and steaming - about 5 minutes. Do not let soup boil or it will curdle.

    Sprinkle with parsley (or any other condiments like cheese, steamed broccoli, etc.) Also good with yams in place of potatoes.
