3 lbs chicken wings, separated at joints, wing tips discarded
Marinade:
- ½ cup tequila
- ½ cup chopped cilantro
- 3 T lime or orange marmalade
- ¼ cup olive oil
- 2 T fresh lime juice
- 1 T pepper
- 3 med. Garlic cloves, flattened
- 1 tsp hot pepper sauce
- 1 tsp salt
- ½ tsp grated lime peel
Place wings in large shallow glass baking dish (or use gallon ziplock bags). Mix marinade in bowl then pour over chicken and refrigerate overnight.
Preheat oven 350F then remove chicken from marinade (reserve it!) and bake in shallow pan for 30 minutes, turning occasionally.
Strain reserved marinade into medium saucepan. Boil until reduced by half, stirring occasionally, about 5 minutes.
- 4 T lime or orange marmalade
- 2 T fresh lime juice
- ½ tsp grated lime peel
- ½ cup honey
Add above ingredients to saucepan and boil 1 minute. Brush marinade over chicken.
Grill until crisp (or broil 6 inches from heat until crisp and brown).
