You gotta have a big appetite for my spicy He-Man Chili. This dish has true heat! A manly combination of sausage, beef, onions, hot green pepper, tomatoes, pinto beans, kidney beans, and of course Tony's Original Creole Seasoning (for real). Saltine crackers are the perfect match to this dish.
Prep time: 30 minutes
Cooking time: 100 minutes
Serves: 12
Ingredients:
1 pound Hot Sausage
1 pound Beef (Ground)
1 Whole Chopped Onions
1 Whole Chopped Bell Pepper
2 Whole Garlic Cloves
1 Whole Louisiana Hot Green Pepper (Diced)
1 cup Burgundy Wine
1 teaspoon Dry Mustard
1 teaspoon Celery Seeds
2 tablespoon Chili Powder
3 cup Roma Tomatoes
4 tablespoon Tony Chacheres Original Creole Seasoning
1 can Pinto Beans
1 can Kidney Beans
Directions:
1: Slice sausage into 1 inch pieces and fry in a Dutch oven until brown.
2: Remove and set aside.
3: Pour off excess fat and fry ground beef.
4: Drain and set aside with the sausage.
5: Pour excess fat from pot.
6: Cook onions, bell pepper, garlic, and hot pepper over low heat until tender.
7: Stir in wine, mustard, celery seeds, and chili powder.
8: Simmer for 10 minutes.
9: In a bowl, mash tomatoes; pour into pot.
10: Add meats.
11: Bring to a boil.
12: Reduce heat; season with Tony Chachere's Original Creole Seasoning.
13: Simmer for 30 minutes, stirring occasionally.
14: Add beans and their liquid; return to a boil.
15: Reduce heat and simmer for 1 hour, stirring occasionally.
