Crockpot Creamy Potato Hamburger Soup
Ingredients:
1 lb ground beef
6 medium potatoes, peeled and diced
1 medium onion, chopped
2 cloves garlic, minced
3 cups beef broth
1 cup milk
1 cup heavy cream
1/2 cup shredded cheddar cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon paprika
1/2 teaspoon dried thyme
1 tablespoon olive oil
Directions:
In a skillet, heat olive oil over medium heat. Brown the ground beef, breaking it up into small pieces. Drain excess fat.
Transfer the browned beef to a crockpot and add chopped potatoes, onion, and garlic.
Pour in the beef broth, milk, and heavy cream. Stir to combine.
Season with salt, pepper, paprika, and thyme. Mix well.
Cover the crockpot and cook on low for 6 hours, or on high for 3 hours, until the potatoes are tender.
Stir in the shredded cheddar cheese and let it melt into the soup before serving.
Taste and adjust seasoning as necessary.
