Shrimp, Corn, Potatoes, and Smoked Sausage Foil Packs
Ingredients:
1/2 lb shrimp, peeled and deveined
1/2 lb smoked sausage, sliced
4 small red potatoes, quartered
2 ears of corn, cut into thirds
2 tablespoons butter, melted
2 garlic cloves, minced
1 tablespoon Old Bay seasoning
1 teaspoon paprika
Salt and pepper to taste
1 lemon, sliced
Fresh parsley for garnish (optional)
Directions:
Preheat your oven to 400°F (200°C) or preheat your grill to medium-high heat.
In a large bowl, combine the shrimp, smoked sausage, potatoes, and corn. Drizzle with melted butter and add the minced garlic, Old Bay seasoning, paprika, salt, and pepper. Toss to coat everything evenly.
Tear off 4 large sheets of heavy-duty aluminum foil (about 12x12 inches). Divide the shrimp mixture evenly among the foil sheets. Place a lemon slice on top of each packet.
Fold the sides of the foil up over the ingredients, sealing the packets tightly.
Place the foil packets on a baking sheet (if using the oven) or directly on the grill grates. Cook for 20-25 minutes in the oven or 15-20 minutes on the grill, or until the potatoes are tender and the shrimp is cooked through.
Serve: Carefully open the foil packs (be cautious of the steam). Garnish with fresh parsley if desired, and serve hot with extra lemon wedges on the side.
