Garlic Parmesan Pork Chops with Cheesy Scalloped Potatoes
Ingredients:
4 pork chops
4 cloves garlic, minced
1/4 cup grated Parmesan cheese
2 tbsp olive oil
1 tsp dried thyme
4 cups thinly sliced potatoes
1 cup shredded cheddar cheese
1 cup heavy cream
Salt & pepper, to taste
Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C)
Season the Pork Chops:
In a small bowl, mix the minced garlic and grated Parmesan cheese with a sprinkle of salt and pepper. Rub this mixture onto both sides of the pork chops.
Sear the Pork Chops:
Heat olive oil in a skillet over medium-high heat. Add the pork chops and cook until browned, about 4 minutes per side. Remove from heat.
Prepare the Potatoes:
Arrange the thinly sliced potatoes in an even layer in a baking dish.
Add Cheese Sauce:
In a small bowl, mix the heavy cream with the shredded cheddar cheese. Pour this mixture evenly over the sliced potatoes.
Assemble and Bake:
Place the browned pork chops on top of the potatoes in the baking dish. Bake for 50 minutes, or until the potatoes are tender and the pork chops reach an internal temperature of 145°F (63°C).
