One of our admins shared a cute meme about leftovers on USFRA Facebook page today (the day after Thanksgiving) so I wanted to share some things we do with leftover turkey, and hopefully others share more ideas in comments.
Turkey and mushroom soup rice bowls - homemade mushroom soup is a staple in our household (recipe here) since we use it on brown/red jasmine rice with leftover turkey or pork roast or chicken often. Just add chopped turkey, rice, mushroom soup, steamed carrots, green peas, broccoli or veggie of your choice, nuke and you have an easy hearty meal.
Turkey nachos -- I've been eating these all week since I cooked our turkey on Monday and it's just me and Bill so lotsa leftovers! Chop cooked turkey into little chunks and spread on top of chips (sometimes I use refried beans too), lotsa cheddar and nuke ... then top with salsa (and maybe lettuce, avacado, etc.)
BBQ turkey -- we don't eat bread but chopped turkey heated or served with your fave BBQ sauce is great, and makes a good sammich.
Add some chopped turkey and cheese in either creamy broccoli soup or old-fashioned potato soup.
White chili --I used to have a great white chili recipe using chopped cooked turkey, navy beans, etc. but can't find it so maybe someone has one they can share in our Let's Eat group.
Turkey pot pie with biscuit topping -- we don't eat this but an easy comfort dish is leftover chopped turkey, veggies, your preference of soups or cream sauce poured into a baking dish topped with biscuits then bake.
Cooked turkey also freezes well once it's picked off the bone. What ideas or input do you have...?
