Chicken Bacon Ranch Potato Bake
Ingredients:
4 large potatoes, cubed
1 pound chicken breast, cubed
6 slices of bacon, chopped
1 packet ranch dressing mix
1/2 cup olive oil
Salt and pepper to taste
1 cup shredded cheddar cheese
1/2 cup sour cream (for serving)
Chopped green onions (for garnish)
Directions:
Preheat your oven to 400°F (200°C). Grease a 9x13 inch baking dish.
In a large bowl, mix together the cubed potatoes, chicken, chopped bacon, ranch dressing mix, and olive oil. Season with salt and pepper. Toss to ensure everything is well coated.
Transfer the potato, chicken, and bacon mixture to the prepared baking dish. Spread out into an even layer.
Bake in the preheated oven for 45-50 minutes, or until the potatoes are tender and the chicken is fully cooked.
Sprinkle shredded cheddar cheese over the top of the bake during the last 10 minutes of cooking time, allowing it to melt.
