Garlicky Firehouse Chicken

    This recipe adds a lot of ZING on your tastebuds if done right. It will be garlicky, very lemony and salty all at the same time

    For the main ingredient: CHICKEN! You can either use cornish hens or a roaster chicken for this. Make sure to pre-heat the oven to 475 degrees

    2 roaster chickens or 4 cornish hens (small whole chickens) cleaned and seasoned
    16 cloves of garlic rough chopped
    2 shallots minced
    1/2 cup of parsley
    1/2 cup salt
    20-24 fresh lemons squeezed (depending on how many are eating. (Use less if just 2 - 4 people) and put aside

    Place chicken in oven and cook for 1-1/2 hours or until golden brown. In the meantime, cut up your garlic and shallots and place into a mixing bowl. Add your lemon juice, salt and parsley and mix. Taste. The mixture should be garlicky, lemony and salty at the same time so that your taste buds can have a party. Once the chicken is initially done, remove from the oven and let rest for 5 minutes.

    Add the mixture over the top of the chicken and the inside of the chicken so it is flavored. Place back into the oven at 500 degrees for an additional 15 minutes so the garlic and shallots have a chance to cook a little. Baste the chicken in the final 5 minutes to add more flavor. Serve with either mashed potatoes, rice or your favorite veggies. Enjoy
