Parmesan Roasted Carrot Fries
2 lbs carrots, peeled and cut into thin strips or "fries"
1 tablespoon oil (olive oil or vegetable oil)
Salt and pepper to taste
1/2 cup grated Parmigiano Reggiano cheese
Instructions:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or aluminum foil and lightly grease it with oil.
In a large bowl, toss the carrot strips with the oil until evenly coated.
Arrange the carrot strips in a single layer on the prepared baking sheet. Make sure they are not crowded to ensure even cooking and crispiness.
Season the carrot fries with salt and pepper to taste.
Roast the carrots in the preheated oven for about 20-25 minutes, or until they are tender and starting to brown, flipping them halfway through the cooking time for even browning.
Once the carrot fries are cooked, remove them from the oven and sprinkle the grated Parmigiano Reggiano cheese over the top while they are still hot.
